Forget compact & heavy pancakes – here's how to make fluffy yet energy- and nutritious pancakes for your baby (and yourself).

Ingredients:

(for approx. 10 pancakes)

Do this:

  1. Separate 3 eggs, the whites in one bowl and the yolks in another.
  2. Beat the egg whites vigorously until they become stiff like a meringue.
  3. Measure out 1.5 dl Unna porridge powder (here we used the 6 month old version)
  4. Mix in baking powder and possibly a little vanilla powder and crushed almonds into the porridge powder.
  5. Mix with the complementary food (180 ml water + 4 tbsp powder)
  6. Mix everything carefully and fry directly on medium heat in a pan with butter.
The trick to making pancakes fluffy is to beat the egg whites separately, to a meringue. Using supplemental milk instead of regular milk in the pancakes not only increases the nutritional content, but also gives them a nice sweet taste – so seasoning is really unnecessary.

The eggs, together with the porridge and complementary food, result in a fairly complete meal for a little one, with plenty of energy and a good balance of protein, carbohydrates and fat. There is also a good amount of iron, vitamin D and a wide range of vitamins and minerals adapted for babies from 6 months.

The pancakes are best freshly made, but can of course be stored in the fridge for a few days or frozen to take out when needed. Can be eaten just as they are or with a topping of, for example, nut butter or fruit and berries.
